Spooky Gluten Free Banana Bread
Here is yet another fun recipe for your skull mold! This is my peanut butter banana bread recipe, made into the shape of skulls! So fun for Halloween, and good with or without your light dusting of powdered sugar. This recipe is a great way to use those old bananas, so they don’t go to waste. These cute little loaves are naturally sweetened with ripe bananas (if you don’t dust with powdered sugar). - Ripe Bananas – I never throw away my ripe bananas. This is a perfect recipe to use them up!
- Eggs – I always advocate for farm fresh, pasture raised eggs.
- Baking Soda
- Vanilla extract – Buy the real stuff. I know it’s expensive, but totally worth it.
- Peanut Butter – Natural or just your standard peanut butter is fine. The recipe will be sweeter with the standard peanut butter.
- Cinnamon
- Coconut flour – Can be subbed for almond flour or your favorite gluten free flour.
- Salt
- Powdered sugar – for dusting the skulls, which is totally optional.

Step 1. Preheat oven to 350 degrees.
Step 2. Peel bananas and place them in a bowl. Mash them with your whisk until smooth. You can also use a hand mixer.
Step 3. Add vanilla, peanut butter, eggs, cinnamon, salt and baking soda and whisk until smooth.
Step 4. Place mixture in sprayed skull molds.
