Hi, I’m Erin!
I come from a long line of home chefs. My maternal Grandmother had eight children, and I’m told did a ton of cooking as my mother and relatives were growing up. She always loved being in the kitchen, and has passed along some wonderful recipes that our family still cooks today. My mother worked full-time when we were growing up, and still managed to always have a home-cooked meal on the table almost every night. I come from a family of four children, so my parents did whatever they could to pinch pennies and be resourceful when it came to feeding our family. My mom always used what she had to make a meal. That’s where I get it from. I do everything I can do use what foods I have in home to make a nutritious meal, while still utilizing lots of fresh fruit and veggies.
I try to eat healthy most of the time, but I’m definitely not against desserts and cheat meals, as you will notice from my recipes. Life is all about balance, and I don’s see making food choices any different. Life without cakes and cookies is a life I don’t want to live!
I want to inspire you to cook more at home. Doing so will save you money and make you a healthier person. Cooking can seem like a daunting task. Making sure you are prepping, making grocery lists (and following them), and getting creative with your food will set you up for success at home.
I hope you enjoy my recipes as much as I love creating them. And I hope they inspire you to cook at home. I can’t wait to see what you come up with!
