Pancake Donuts

I love making these pancake donuts for the kids. They are so much fun, and kids will think they are eating a treat for breakfast! They are hand-held and easy to serve with a little cup of maple syrup for dipping. You can top them with whatever you want! I chose colorful sprinkles for these, but you can top with blueberries, chocolate chips, or any of your favorite pancake toppings.

  • Sheet Pan – My silicon donut molds are flimsy, so I lay them on a baking sheet so they are easy to remove from the oven.

  • Birch Benders Pancake and Waffle Mix – I used Original Buttermilk, because it’s just soooooo good! It’s the best pancake mix I’ve ever used. You should definitely try it!
  • Water – measurement is approximate. Use as much as you need to make the pancake batter consistency that you like.
  • Sprinkles – I like to use sprinkles because the kids think they are eating dessert for breakfast!

How to make these baked pancake donuts

Step 1. Preheat oven to 350 degrees.

Step 2. In a mixing bowl, mix your pancake mix and water with a whisk until smooth, and until the desired thickness of the batter.

Step 3. Spray donut molds with non-stick spray and lay on a baking sheet.

Step 4. Pour mix into each mold about 3/4 of the way full, so they don’t bubble over while cooking. Sprinkle with colorful sprinkles or any topping you would like.

Step 5. Bake for about 20 minutes, until the tops are springy and no longer wet.

Step 6. Let cool for a few minutes before removing them from the mold. Serve with maple syrup.
