Parmesan Crusted Cabbage

I struggle to find a good, hearty vegetarian dish as a main course if I’m looking to eat a little less meat. If you think a vegetarian meal can’t be hearty, you are dead wrong. This Parmesan crusted cabbage is crispy, salty and so delicious, you won’t even miss that protein you are so used to having at every meal. Make this dish on your next Meatless Monday meal!

  • Sheet Pan – Preferably a non-stick pan. If you don’t have a non-stick sheet pan, use parchment paper.
  • Spatula – I used a silicon spatula, but anything you like stirring with will be fine.

Ingredients & substitutions

  • Small cabbage – I used half of a large head of cabbage, because that’s what I happened to have at my house. But a small head of cabbage should be plenty.
  • Freshly grated Parmesan – This will caramelize and give the cabbage a nice, crispy outside.
  • Olive oil – Any high heat oil will do, I prefer olive oil.
  • Italian seasoning 
  • Parsley – Fresh parsley is just a garnish, but it gives the dish a hit of freshness on top of the rich, crispy cheese.
  • Chopped pistachios – I used salted pistachios because that’s what I had on hand. Pepitas, walnuts or almonds are also a nice substitute. Use whatever you have in your kitchen!

How to make this baked cabbage with cheese

Step 1. Preheat oven to 400 degrees. Line a sheet pan with parchment paper

Step 2. Add Parmesan cheese to the sheet pan then add oil and seasoning. Mix together and divide into 5-6 piles, and flatten. Place the cabbage slices on top of each pile.

Step 3. Place in the oven for 15-20 minutes. Remove from the oven and allow to cool a bit, so the cheese hardens. Pour off the excess oil and carefully flip over. Cook for another 10 minutes.

Step 4. Top with parsley and pistachios.
