Steak Bites
Hunting season is in full swing here in Wisconsin, so it’s time to find some good steak recipes to cook up some of that meat from those trophy bucks. These steak bites can be made from venison or beef, whichever you prefer! This recipe is super simple, and it’s a great, quick weeknight meal. And it becomes even easier if you make those potatoes ahead of time!

- You can use any type of steak and any cut! I used feed tenderloin for this, but I’ve also made this with venison tenderloin and back straps.

Here’s what you’ll need to make it
- Sauce Pan – To boil your potatoes, so they get nice and crispy in your pan in a shorter amount of time.
- Frying Pan – I love using either cast iron or Hexclad for this. Either of these give the steak a nice sear. Big time sales on the Hexclad website this time of year!
- Spatula or tweezers – I recently started using kitchen tweezers and I absolutely love the dexterity they give you.
- Measuring Cups and Spoons – Or measure with your heart. This is a great recipe to do so!

Ingredients & substitutions
- Tenderloin cubed
- Dijon
- Cloves garlic minced
- Red pepper flakes
- Salted butter
- Russet potatoes diced
- Worcestershire sauce


How to make these beef or venison steak bites
Step 1. To a pot of salted, boiling water, add diced potatoes, and let cook until they are fork tender. Drain and set aside.
Step 2. Cut your tenderloin into bite sized pieces. Pat dry with a paper towel. Toss in Dijon mustard until completely coated. Let it come to room temperature.
Step 3. To a frying pan, add about a tablespoon of avocado oil and a tablespoon of butter. Let it melt over medium heat. Add steak, let cook for 2-3 minutes, then flip, and let cook for about a minute more. Remove from the pan.
Step 4. Add avocado oil to the pan, and add the potatoes. Let them sit, until they get crispy on the sides. Toss until they are crispy, remove from the pan.
Step 5. Add a little more avocado oil, minced garlic, remaining butter, red pepper flakes and Worcestershire sauce to the pan and cook for a minute or two, until fragrant.
Step 6. Add potatoes to a plate, top with steak bites, and then top with the sauce. Enjoy!


FAQs about searing steak
I love Hexclad. They are easy to use, clean and they give you the perfect sear on steak. Cast iron is also a great option.
Be sure to pat the steak dry, salt, let come to room temp and drop it in a nice, hot pan. Don’t touch it! Flip it just one time and let it sear on the other side.
