Zucchini Antipasti

This zucchini antipasti has been one of my favorite recipes for a very long time. It’s so easy, and it’s a fantastic way to use up all that garden zucchini during the summer. Grilling zucchini makes it so hearty and filling, it could almost be a full meal.

  • You can make this in parts! I start by slicing my zucchini and throwing it in a bag. Add the dressing, and leave it in the refrigerator until I’m ready to grill.
  • It’s a great way to get all those daily vegetable servings in! You will start eating these and you won’t want to stop.
  • This is a recipe that I can make when I’m not sure what to make. I try to keep a bottle of Italian dressing on hand. And when my garden produces more than enough zucchini, this is the perfect recipe.

Ingredients & substitutions

  • Zucchini – I used 3 medium zucchini from my garden.
  • Italian Dressing – I prefer Wishbone Italian dressing, because it’s what I grew up on.

How to make this antipasti zucchini

Step 1. To a zip top bag, add sliced zucchini and enough Italian dressing to cover the zucchini. Zip up, and let sit for at least 30 minutes to marinate.

Step 2. Grill zucchini over medium heat, on each side, until tender. I like to leave it on the grill and flip only once, to get the nice charred grill marks.
