  • Cherry tomatoes – I prefer cherry tomatoes, but you can also use grape tomatoes. I use Flavor Bomb’s. You can get them at Sam’s Club! Side note, Sam’s club might be my new favorite store.
  • Mini cucumbers sliced – I love these because the skin is tender, and all you have to do is slice them. They are delicious and easy to prep.
  • Butter beans – I love butter beans for this salad, but any white bean will do.
  • Mozzarella pearls – Gotta have the cheese!
  • Basil – Fresh basil is the best, but you can also use dried basil.
  • Balsamic vinegar – I use a quality, aged balsamic vinegar. It’s thicker and so flavorful.

How to make this simple vegetarian salad

Step 1. Chop veggies and pour all ingredients into a large bowl.

Step 2. Drizzle with balsamic and basil, and stir once again.

Step 3. Top with more basil and serve.
