Tater Tot Breakfast Bowl

I love a good breakfast bowl. You can put anything in it, and it’s a great way to use up any leftover veggies you have from the week prior. I used peppers, avocado, and poached eggs in this tater tot breakfast bowl, but you can truly use anything you have on hand. The tater tots make an easy and delicious base. Top it with a drizzle of chipotle mayo and a couple of poached eggs, and you’ve got yourself a winning dish!

Ingredients & substitutions

  • Tater Tots
  • Sweet peppers sliced 
  • Eggs –  poached. I prefer poached eggs because the yolk acts as a sauce, but you can prepare the eggs your favorite way.
  • Pico de gallo – I always buy this pre-made, but you can use salsa, or make your own.
  • Mayonnaise
  • Chipotle sauce – The stuff in the small can in the Mexican food section.
  • Avocado
  • Lime
  • salt and pepper
  • cooking spray or oil
  • splash of white vinegar – for poaching. This keeps the egg white together in the water.

How to make this breakfast bowl

  • Pre-heat oven to 400. Place tater tots on your sheet pan and bake as directed.
  • Boil enough water to cover eggs. Once the water comes to a boil, add a splash of white vinegar. Crack both eggs in the water and let poach for 3 minutes. Remove from the water and place on a paper towel.
  • Slice peppers and sautéed them to your liking. Sprinkle with salt and pepper to taste.
  • Mix mayo and chipotle sauce together, and set aside.
  • Peel and slice the avocado.
  • Assemble your bowl: Tater tots on the bottom, then peppers, then poached eggs, then avocado. Top with pico de gallo, and drizzle with chipotle mayo. Add a squeeze of lime juice if that’s your thing, and enjoy this tater tot breakfast bowl!

How do you poach an egg and keep it in shape?

Use a splash of vinegar in the water! It will keep it from the whites getting all wispy in the pan. You can trim any remaining parts off the poached egg.
