Strawberry Yogurt Clusters

I’ve seen a similar recipe floating around the internet, so I had to try it for myself…with just a little twist. I put mine on a stick! I thought it would be a fun way to enjoy these deliciously sweet strawberry yogurt clusters. Make with simple, healthy ingredients, there’s will have your kids thinking they are eating a dilly bar! The Greek yogurt makes these high in protein and low in sugar, and are the perfect treat to sub ice cream. If you need a delicious and fun recipe, give these strawberry yogurt clusters a try.

Start by putting together your yogurt mixture. Stir your yogurt, diced strawberries, maple syrup, vanilla and lemon zest together until well combined. On a parchment lined sheet pan, pile 4 separate blobs of the mixture. As a popsicle stick to each, and top with any leftover yogurt you have. Freeze for 4 hours to 1 day. Once the clusters on a stick are frozen, remove them from the freezer and melt your chocolate.

Over low heat, melt your chocolate, stirring constantly with a silicon spatula. You can also melt your chocolate in the microwave in a microwave safe bowl. Microwave about 10-20 seconds at a time, stirring in between. It’s important not to melt chocolate too fast, as it can seize up. Once that happens, there is no coming back from it, and you will need to melt new chocolate. I had to learn that lesson the hard way years ago!

Dunk your clusters in melted chocolate. Replace your chocolate covered strawberry yogurt clusters on your parchment lined sheet pan, and return to the freezer for about another hour, or until he chocolate is hardened.

Remove from the freezer for 5-10 minutes or so before enjoying so they soften slightly.
