This strawberry cucumber salad is such a great way to use those sweet summer strawberries. The mint and cucumber add a freshness that just tastes like summer. If you need a great salad recipe to help cool you down this summer, this is the recipe you need.
Start by chopping your romaine. I chose romaine because it’s a heartier lettuce, and will hold up nicely with the salad pre-dressed. Other lettuces might wilt and get soggy. This salad stays crisp even next day, so it’s great for leftovers! I digress…
Chop your lettuce and add to a bowl. Next, slice your strawberries and cucumbers and add those to the bowl. Chop your mint and almonds, and grate your Parmesan if you don’t have pre-grated. Toss everything in a bowl. Now it’s time to make your dressing.
I’ve said it before, and I’ll say it again… Making your own dressing is so easy, and so worth it. This particular dressing is a white wine vinaigrette. Add your white wine vinegar to a jar. Then add your honey, olive oil, Dijon, salt and pepper. Cover the jar and shake until the dressing is mixed.
Pour the dressing over the salad and toss! This salad is great served as a side, or as a main dish. This recipe pairs so well with a piece of chicken or salmon. It holds up well, so it’s great for meal prepping lunches for the week!

Strawberry Cucumber Salad
- 1 Cutting board
- 1 Knife
- 1 Large Bowl
- 1 microplaner or cheese grater Or buy pre-grated cheese
- 1 Head romaine chopped
- 1 Cup strawberries chopped
- 1 Cup mini cucumbers sliced
- 1 Tbsp fresh mint chopped
- 1/2 Cup almonds crushed, sliced, slivered, whatever your preference
- 1/2 Cup grated Parmesan
White Wine Vinaigrette
- 1/4 Cup olive oil
- 1/4 Cup white wine vinegar
- 1/2 Tsp dijon
- 2 Tbsp honey
- salt and pepper to taste
- Chop all veggies, nuts and cheese and add them to a bowl. Stir in your favorite dressing. This salad is great with chicken or salmon as well!
