Ingredients & substitutions

  • Mini cucumbers – can sub regular cucumbers, but the minis are great because of their tender skin.
  • Salt
  • Chili crisp – if you haven’t bought chili crisp yet, now is the time!
  • Sesame oil – it has a nice, nutty flavor and it’s so good for many recipes.
  • Rice vinegar – white vinegar works too.
  • Honey – you can also sub white sugar or sweetener or your choice.
  • Toasted sesame seeds
  • Soy sauce – I used low sodium.
  • Minced garlic – I prefer to use fresh and use a garlic press to mince.

How to make this spicy Asian cucumber salad

Start by slicing and salting your cucumbers and set aside in a bowl. Leave them sit for about 10 minutes.

Add the remainder of your ingredients to the bowl and toss until well combined. Enjoy as a salad, a side or a meal by adding your favorite protein!

FAQs about spicy cucumber salad

How long will this cucumber salad last?

About 4-5 days in the refrigerator.

How do you keep the cucumber salad from getting soggy?

Adding salt to sliced cucumbers draws out the extra moisture in the vegetable, through a process called osmosis. Over time, the salt absorbs the water from the cucumber. What you’re left with is a slightly drier cucumber with a more concentrated flavor (that won’t make your salad watery).
