I love a good salad with all the Asian flavors. This spicy cucumber salad is so fresh, but tastes hearty with the soy sauce and chili crunch flavors. This easy salad recipe takes only minutes to make a minimal ingredients. It pairs great with your favorite protein, and it’s just another way for me to devour chili crisp. - Mini cucumbers – can sub regular cucumbers, but the minis are great because of their tender skin.
- Salt
- Chili crisp – if you haven’t bought chili crisp yet, now is the time!
- Sesame oil – it has a nice, nutty flavor and it’s so good for many recipes.
- Rice vinegar – white vinegar works too.
- Honey – you can also sub white sugar or sweetener or your choice.
- Toasted sesame seeds
- Soy sauce – I used low sodium.
- Minced garlic – I prefer to use fresh and use a garlic press to mince.

Start by slicing and salting your cucumbers and set aside in a bowl. Leave them sit for about 10 minutes.

- 6 mini cucumbers sliced
- 1/2 Tsp salt
- 2 Cloves minced garlic
- 1 Tbsp soy sauce
- 1 Tbsp rice vinegar or white vinegar will do
- 1 Tsp sesame oil
- 1 Tsp honey can sub white sugar
- 1 Tsp toasted sesame seeds more for garnish
- 1 Tsp chili crisp more if you like more heat

- Slice cucumbers and put them in a bowl. Toss in salt, and let them sit for about 10 minutes.After 10 minutes, put the remaining ingredients in the bowl and stir until well combined. Top with more chili crisp and sesame seeds.
