Smash Burger Salad

At the end of just about every week, I seem to have leftover veggies I’m not sure what to do with. Salads are an excellent way to use all those extra veggies! This smash burger salad can be made up of all of your favorite veggies! This week, I had romaine, peppers, tomatoes and chives leftover, which made the perfect base for this salad. The dressing is made of burger condiments that you probably always have in your fridge. This salad is hearty and delicious, and is sure to please the family. Make this recipe the next time you have extra veggies just lying around!

  • American cheese
  • Romaine
  • Mini peppers
  • Cherry tomatoes
  • Dill pickle chips
  • Handful chives
  • Tater tots
  • Eggs

  • Pickle juice, until you like how the dressing tastes

How to make these burger salads

Step 1. Divide your ground beef into 4 equal parts. Smash them slightly, add salt and pepper. To a medium/high heat griddle or frying pan, add about a tablespoon of butter. Once melted, smash your burgers into the butter and let them cook. Flip and add cheese. Cook until the cheese is melting and getting crisp on the griddle. Set aside.

Step 2. Chop all your veggies into bite sized pieces and add them to a large bowl.

Step 3. Make your dressing. Add the mayonnaise, ketchup, Dijon, salt and pepper to a bowl a stir until well combined.

Step 4. Preheat oven to 400 degrees. Place tator tots on a baking sheet and cook for about 5 minutes. Remove them from oven and smash with the bottom of a glass. Put back into the oven for about 15-20 minutes until crispy.

Step 5. Fry your eggs. Melt olive oil or butter over medium heat. Crack your eggs into the center and let fry until the bottom is crispy and the whites are cooked.

Step 6. Toss your veggies into the dressing. Divide into 4 plates and top with your burger, smashed tots, egg and garnish with chives.
