Savory Sweet Potato Waffle
Breakfast/Brunch is my favorite meal of the day. You can really qualify anything as brunch if it has an egg on it; that’s my motto! This brunch item has been something that I’ve experimented with for some time. This is the savory sweet potato waffle. I’ve topped it with a delicious sauce, green asparagus, a fried egg, bacon (because why not?) and everything but the bagel sesame seasoning. The sauce is Bitchin’ Sauce, the cilantro kind. And for those who don’t know, Bitchin’ Sauce is an almond-based sauce and a little bit packs a big flavor punch!
How to make this savory waffle
Step 1. Peel the skin off of the baked sweet potato, mash, and add flour, milk, salt and pepper.
Step 2. Whisk together until it’s batter-like. Place in a pre-heated, sprayed waffle maker, keeping the heat on the lowest it can go.
Step 3. Cook the waffle for 10 minutes without opening the maker.
Step 4. Once finished, remove from waffle maker and top your savory sweet potato waffle with your favorite toppings.

- 1 medium sweet potato Baked
- 2 tbsp coconut flour
- 1/4 cup coconut or almond milk
- pinch of salt and pepper
Instructions
