Raw Vegan Pecan Rolls
If you haven’t started making your desserts with dates, now is the time to take the leap. Dates are one of my favorite sweet treats. They are packed with fiber and nutrients, and totally satisfy your sweet tooth. These raw vegan pecan rolls are extra sticky and sweet, and can be eaten for a healthy snack or dessert.

Ingredients & substitutions
DOUGH
- 1.5 cups almond flour
- 1/4 cup pecans
- 1/4 cup maple syrup
- 2 tbsp psyllium husk
- 3 tbsp coconut oil
- 1 tsp vanilla extract
- 1 tbsp Water
FILLING
- 1 tbsp cinnamon
- 1 tbsp melted coconut oil
- 1 tbsp water
- 1 tsp vanilla extract
- 1/3 cup chopped pecans
- pinch of salt
- 1 cup dates
TOPPING
- chopped pecans
- maple syrup

How to make these raw vegan desserts
Step 1. To your food processor, add all dough ingredients and process until it looks like dough. Add milk as needed to get desired consistency.
Step 2. Roll dough into a rectangle on parchment paper, to about 1/2 inch thick.
Step 3. All filling ingredients in the food processor, leaving out the pecans. Process until completely smooth.
Step 4. Spread the filling out over the dough, leaving about 1/2 inch on the edges. Sprinkle the chopped pecans over the filling.
Step 5. Roll into a log, using the parchment paper to roll the dough over the filling into a log. Twist the ends of the parchment paper to hold the dough into a tight roll. Put the log in the freezer for 30-45 minutes until it is firm.
Step 6. Once the log is firm, cut into slices.
Step 7. For the topping, mix chopped pecans and maple syrup until the pecan pieces are just sticky. Top your rolls and eat with a fork.

These have a cookie dough-like texture, and it’s so good! The pecans add a little depth to the recipe as well.
These are quite sweet without having to add any refined sugar! Maple syrup has plenty of natural sweetness, and so do dates.
