Radish Greens Salad
This year I’ve made it a goal of mine to have less food waste. I really try to cook with this in mind. This radish greens salad is the perfect recipe to have little to no waste making a fresh summer salad. I bet you didn’t even know you could eat radish greens! I’m here to tell you, you can. And you won’t regret it.

- Vegetable peeler
- Mandolin or knife to cut radishes

Ingredients & substitutions
PESTO
- radish greens from radishes about a cup
- 2 cloves garlic
- .5 Ounces Pine nuts divided
- 4 tbsp olive oil
- pinch of salt
SALAD
- 1 can butter beans drained
- 1/2 Cup Parmesan cheese shaved
- 1 lb radishes
- 1 tsp lemon zest
- 1.5 ounces pine nuts

How to make this no waste salad
Step 1. To a food processor, add the radish greens, garlic, pine nuts, olive oil and salt, and process until well combined.
Step 2. With your mandolin or knife, cut the radishes into thin slices.
Step 3. To a bowl, add the sliced radishes, pesto, butter beans, Parmesan cheese and lemon zest, and mix until well combined. Top with more Parmesan and pine nuts.
