Step 3. Lay parchment on the counter, and spray with your favorite cooking spray.

Step 4. Place your chicken mixture on the parchment. Use another piece of parchment, spray with cooking spray, and lay it on top of the chicken. Flatten the mixture to about 1/4 inch with a rolling pin. Peal off the top layer of parchment.

Step 5. To half of the chicken mixture, spread your tomato paste, leaving about 1/4 inch around the edge. Top with mozzarella and fold the chicken over, creating a pocket. Pinch the edges closed. Top with grated Parmesan cheese.

Step 6. Cook in the air fryer for about 20-35 minutes, until the pocket is crisp on top and cooked through.
