Protein Chocolate Pudding
Cottage cheese wins again in this protein chocolate pudding recipe. Cottage cheese is for sure having a moment, and I’m here for it. This is everything you want in chocolate pudding, with thick ganache and the benefits of a high protein snack. Make this awesome protein chocolate brownie batter pudding to satisfy your sweet tooth.
All you need for this recipe is a packet of putting, cocoa powder and a tub of cottage cheese. Throw these ingredients into a blender, and blend until smooth. Depending on how powerful your blender is, you might have to add a splash of milk or water to thin it out.
Pour the mixture into a mixing bowl and fold in the chocolate chips. Pour this mixture into each storage container. Set those aside and make your ganache.
To a saucepan, add the remaining chocolate chips and milk, stirring constantly over low heat. Do this until the chocolate is melted and the milk is combined.
Spoon a couple of tablespoons of the ganache into each of the storage containers and smooth over slightly. Cover and refrigerate for at least 4 hours. Enjoy this thick, high protein, sweet treat! You can enjoy this on it’s own or spread it on a rice cake.

Ingredients
Pudding
- 3 Cups cottage cheese
- 1/3 Cup unsweetened cocoa powder
- 1/2 Cup chocolate chips I used HuKitchen
- 1 Packet vanilla or chocolate instant pudding mix 3.4 ounce packet
- coarse salt (optional)
Ganache
- 1 Cup chocolate chips I used HuKitchen
- 1/2 Cup whole milk or milk of choice
Instructions
- Place pudding mix, cottage cheese and cocoa powder into a blender. Blend until smooth. If it’s too thick for your blender, add a little milk or water to thin it out slightly.Transfer the mixture to a mixing bowl. Stir in 1/2 cup of chocolate chips. Pour mixture evenly into your storage containers, making 5 servings.In a saucepan over low heat, melt 1 cup of chocolate chips into 1/2 cup of milk. Stir constantly with a spatula until the chocolate and milk combine. Scoop a spoonful of the ganache into each storage container. Cover and refrigerate for at least 4 hours before enjoying.
