Portobello mushroom pizzas are a great weeknight meal. Easy to assemble and cooks quickly. Not to mention they are a great way to start the week off on a healthy note.
This recipe is so simple, and they are fun for kids to put together, as well! If your kids don’t like mushrooms, you can easily substitute English muffins for their crust. All you need is jarred sauce, shredded mozzarella (or mozzarella pearls) and your favorite toppings. We used mini pepperonis, because they make it more fun.
First off, clean your portobello mushroom caps by removing the stems and scraping out the spores. You can use the stems as toppings if you would like!
Spoon in the sauce on each mushroom cap, then top with mozzarella and mini pepperonis. Bake at 400 degrees until the cheese is melty and bubbly. Top with basil.
Serve with your favorite salad!
Portobello Mushroom Pizza
- 1 Baking Sheet
- 1 pack portobello mushroom caps
- 1 Jar pizza sauce
- 1 Bag mozzarella cheese
- 1 Bunch basil
- mini pepperonis
- Preheat oven to 400 degrees. Remove stems and spores from portobello mushrooms. Spores can be removed with a spoon by scraping them out. Fill caps with pizza sauce. Add your favorite toppings. Bake for about 10-15 minutes or until mushroom caps are tender and cheese is melty.Top with basil and serve with your favorite salad.
