Peanut Butter Banana Bread

This is one of my favorite banana bread recipes. My husband requested this recipe without chocolate chips. I’m not sure why a person wouldn’t want chocolate chips in their banana bread, but I love him anyway! LOL! Of course I couldn’t just make banana bread. I had to make cinnamon honey butter to go with it. That recipe will be on the blog tomorrow! But for now, give this peanut butter banana bread recipe a try!

Start by mashing your bananas. I just do this with a whisk, but you can definitely use a hand mixer as well, which will make your bananas extra smooth. We aren’t afraid of a few chunks, so a whisk works just fine.

Add all your wet ingredients to a bowl and mix until smooth. Add your cinnamon, salt and baking soda next and mix well. Lastly, gradually add your coconut flour until the batter is mixed. Pour the batter into a sprayed loaf pan. Bake it for about 45 minutes at 350 degrees. Test the center with a toothpick. If the toothpick comes out clean, it’s done! let it cool slightly before eating. You can keep this banana bread in the refrigerator for about a week.

Added bonus, this recipe is gluten free! Making this banana bread with coconut flour makes it easier on the tummy for those who have an intolerance to gluten.

  • 1 Mixing bowl
  • 1 Whisk
  • 1 loaf pan
  • Measuring Cups and Spoons


  • 4 Ripe bananas
  • 2 eggs
  • 3/4 Tsp baking soda
  • 1 Tsp vanilla extract
  • 1/4 Cup peanut butter
  • 1/2 Tsp cinnamon
  • 1/2 Cup coconut flour
  • 1/4 tsp salt


  • Preheat oven to 350 degrees.
    Peel bananas and place them in a bowl. Mash them with your whisk until smooth. You can also use a hand mixer for this.
    Add your vanilla, peanut butter, eggs, cinnamon, salt and baking soda and whisk until smooth.
    Slowly add your coconut flour and mix until smooth.
    Place mixture in sprayed loaf pan.
    Bake for about 45 minutes, or until the center is done and a tooth pick comes out clean during a tooth pick test.
    Serve plain or with cinnamon honey butter.
