Parmesan Crusted Tilapia
Sometimes all you need is an easy, cost effective meal, and tilapia filets provide that for you. At a cost of between $2 and $3 per pound, you can feed a family for under $10. And pairing it with a simple salad, you canβt go wrong. I always ask my family, βHave you had your greens today?β Here is one way to answer βyes!β

The breading on this tilapia is just flour, panko, eggs, grated Parmesan cheese, a few spices and parsley. Donβt skip the parsley. It adds a freshness that you will miss if you decide not to use it. Plus, it makes your dish look fancy!
Start by dusting your tilapia with flour. In a zip top bag toss your filets in spices and flour until they are fully coated. Next, dip it in the egg, then the panko/Parmesan/ parsley mixture. You may have to add another egg if you run out.




Heat olive oil in a frying pan over low/medium heat. As soon as itβs hot, fry filets, about 3 minutes per side.

While the filets cool, make your simple salad. Add Arugula to a bowl and drizzle with olive oil, a squirt of lemon juice, and some Parmesan shavings, You can also use grated parm, but I like the larger, salty bite of the shaved Parmesan.

Ingredients
Tilapia
- 1 Bag Tilapia Filets 4-6 filets
- 1 Cup Panko
- 1 Cup Grated Parmesan
- 2 Tbsp Chopped Parsley
- 2 Eggs
- 1 Tbsp Garlic powder
- 1 Tsp Seasoned salt
- 1 Tsp Black pepper
- 1/2 Lemon
- Olive oil for frying
- 1 Cup AP Flour
Simple Salad
- 1 Bunch Arugula
- 1/2 Lemon
- Drizzle Olive oil
- Salt and Pepper to taste
- Shaved Parmesan
Instructions
- In the zip top bag, add flour, garlic, pepper and seasoned salt, toss to mix. Then add tilapia filets and toss them in the flour mixture until coated. Mix the eggs in a bowl like you would if you were making scrambled eggs.In another bowl, mix the panko, chopped parsley and grated Parmesan.Dip each filet into the egg, then to the panko mixture and set aside.In a frying pan, add enough oil to cover the bottom in a thin layer. Over low/medium heat, add the tilapia filets until crisp, about 3 minutes per side. Do this with each filet until finished.While tilapia is frying, make the simple salad.To a bowl, add the arugula, juice from half a lemon, a drizzle of olive oil and salt and pepper to taste. Topped with shaved Parmesan.
