They have peppers and onions that are soft, so even the kids will love them. I love these because they are easily made and you can tailor the ingredients to what you and your family will like. I like to use whole eggs for this recipe. The reason is mostly because of the health benefits of the yolks of an egg. You can read more about that here. You can certainly use egg whites if you so choose.
I also like to put some vegetables in this recipe, not only for flavor, but also for the added nutrients. I prefer sweet peppers and onions. You can also choose your favorite meat. We typically use breakfast sausage or bacon. I usually use whatever I have on hand.
To a bowl, whisk your eggs. Add your cottage cheese, cheddar cheese, diced vegetables and meat of choice. Whisk together. Pour the mixture into a sprayed muffin tin. I used 2, 12 muffin tins. Bake your breakfast egg bites at 350 degrees for about 20 minutes. Remove from the over and enjoy hot. You can also store these in the refrigerator for about a week, for easy grab-n-go breakfast items for those busy weekday mornings.
Breakfast Egg Bites
- 12 eggs
- 1 Cup shredded cheddar cheese
- 1 Cup cottage cheese
- 1/2 Cup diced peppers
- 1/4 Cup diced onions
- 1/2 Lb ground breakfast sausage browned
- green onion for garnish optional
- Preheat oven to 350 degrees.Whisk eggs until they are smooth. Add all ingredients to the bowl, and combine. Spray your muffing tin with non-stick spray. Portion out the egg mixture in each of the muffin tins. Bake for 20 minutes. Garnish with green onion before serving.
