Mushroom and ‘Swiss’ Burger

Ok, ok… it’s not a mushroom and Swiss burger; it’s even better. This mushroom duxelles and smoked Gouda burger is going to knock your socks off. This burger is so easy to make, and will have your guests thinking you are a gourmet burger chef. Give this delicious mushroom and Swiss burger recipe a try.

Duxelles (pronounced ‘ducks-el’) is a finely chopped mixture of mushrooms, onions or shallots, herbs and sautéed in butter, reducing it to a paste. All of these ingredients are tossed in a food processor for easy chopping, then sautéed in a pan. This paste makes for an easy and hearty burger topping. Then comes the cheese… although Swiss is delicious, let’s take it up a notch with a thick slice of smoked Gouda. The nutty flavor of this cheese is a fantastic pairing with the earthiness of the duxelles.

Fry up your burgers in either a cast iron skillet or on the grill. Once they are cooked, add your duxelles and cheese to the burgers. Broil until the cheese is melty. Use a nice, thick piece of cheese. If you are going to eat a burger, let’s not worry about counting calories. Just enjoy it, my friend!

While your cheese melts, mix up your mayo, stone ground mustard, chopped pickle and pickle juice, to make your burger sauce.

Mushroom and Swiss Burger

  • 1 cast iron pan Or grill
  • 1 Frying Pan
  • 1 food processor
  • Measuring Cups and Spoons



  • 4 premade burgers I used 1/3 burgers
  • 4 brioche buns
  • 4 slices smoked Gouda
  • 8 Ounces gourmet mushrooms I used baby Bella, oyster and shiitake
  • 2 Small shallots
  • 2 Small garlic cloves
  • 2 Tbsp dried thyme
  • butter for cooking
  • salt and pepper to taste

Burger Sauce

  • 1/4 Cup mayonnaise
  • 1 Tbsp stone ground mustard
  • 1 dill pickle chopped
  • 1 Splash pickle juice
  • salt and pepper to taste


  • Add your mushroom blend, thyme, peeled garlic and shallots to a food processor and finely chop. Move the mixture to a buttered frying pan over medium heat until the mushrooms are tender.
    Using a grill or cast iron, cook the burgers. Moved the cooked burgers to a pan and top with the mushroom mixture and cheese. Broil on high for a few minutes, until the cheese is melted.
    While the burgers rest, mix your mayo, stone ground mustard, chopped pickle and splash of pickle juice to make your burger sauce.
    Butter your brioche buns and toast in a pan or on a grill, so they are golden brown on the inside.
    Assemble your burgers. Place patty with mushroom mixture and melted cheese on the bun and top with burger sauce and arugula.
