If you are lucky enough to find morels in the wild, do yourself a favor and make this morel pasta. I was not lucky enough to find them on my own, but I have awesome friends who have them on their property and gave them to me! I wanted to make something that really showcased the delicate morel mushroom, and not mask the flavor with a lot of sauce. With that in mind, this light cream sauce was born. This sauce really highlights the flavor of the mushroom. If you have morels, make this delicious morel pasta with garlic cream sauce.
This pasta is very easy to make, and will only take you a few minutes. Start by slicing your mushrooms in half the long way, Once you’ve sliced them, soak them in water to make sure you clean them properly. Set them aside.
To your frying pan, add your butter over medium heat and wait for it to melt. Once the butter is melted, add your minced or pressed garlic. Stir that around until it becomes fragrant, only for about a minute or two. Add your mushrooms and sauté them until they are to your desired doneness.
Lastly, add your heavy cream. Stir that around until it begins to simmer. Place two lumps of vermicelli pasta in the pan and stir around until the pasta softens.
Plate your pasta. Salt and pepper to taste and garnish with fresh chives!
Warning on morels…. If you haven’t eaten them before, don’t over-consume. Because this is a wild mushroom, they can make you feel nauseous if your body isn’t used to them. Learn more about morel mushrooms and look-a-likes here.

- 1 deep frying pan
- 1 Garlic Press
- Measuring Cups
- 1 Lb morel mushrooms washed and sliced in half
- 2 Pieces vermicelli
- 1 Cup heavy cream
- 4 Tbsp butter
- 4 Cloves garlic minced or pressed
- chives for garnish
- salt and pepper to taste
- Slice the morels the long way. Set aside.To a pan, add your butter over medium heat. Once it’s melted, add your garlic. Cook for a minute or two, until if becomes fragrant. Add your mushrooms and sauté until they are completely cooked. Once they are cooked, pour in your heavy cream. Let that simmer for a few more minute. Add the vermicelli pasta and stir until the pasta softens. Plate. Salt and pepper to taste and garnish with fresh chopped chives.
