Low Carb Chicken Caesar Salad Pizza

Apparently this recipe is becoming quite popular, but I’ve used this chicken crust recipe for quite some time! I love a pizza topped with salad, so I decided to make this low carb chicken Caesar salad pizza. This recipe is so good! Made with my easy Caesar dressing, and topped with lots of shaved Parmesan, and just a drizzle of balsamic glaze. This recipe has it all! It’s low calorie, so filling, gluten free and keto! Here’s what you’ll need to make it

  • Large Bowl – Large enough to mix your chicken crust.
  • Baking sheet or pizza stone – I used a pizza stone, just because I had it handy. But a baking sheet works just fine.
  • Parchment paper – Definitely use parchment so you can easily remove the pizza crust from the pan or pizza stone.
  • Small Bowl – This is to make your Caesar dressing.
  • Knife – To chop your lettuce.
  • Cutting board

Ingredients & substitutions

  • Canned chicken breast – You can also use fresh chicken breast, grind it up and cook it longer, but canned chicken breast is surprisingly good and super easy to use in this recipe.
  • Large egg
  • Grated Parmesan – You can buy pre-grated for ease of use, but I prefer to buy a block and grate it myself. I think it tastes better and cost wise, it’s much cheaper.
  • Garlic powder
  • Crushed red pepper flakes
  • CAESAR DRESSING
  • Mayonnaise – I prefer Hellman’s Olive Oil mayo.
  • Dijon mustard
  • Worcestershire 
  • Garlic – Use fresh for this. I buy cloves and press them with my garlic press. I’ve said it before and I’ll say it again, GET A GOOD GARLIC PRESS!
  • Lemon juiced
  • Lemon zest
  • Parmesan grated
  • Black pepper
  • Water for desired thinness of dressing – Without it, the dressing is thicker than I like it, so I prefer to add water.
  • OTHER INGREDIENTS
  • Romaine lettuce
  • Parmesan for topping
  • lemon zest for topping
  • basamic glaze for topping

How to make this keto chicken Caesar salad pizza

Step 1. To a bowl, mix the canned chicken, egg, garlic powder, red pepper flakes and Parmesan. Flatten the mixture into a circle on a parchment lined baking sheet. I used a pizza stone to make the bottom extra crispy. Flatten to about 1/4 inch thick.

Step 2. Bake chicken crust at 375 degrees for about 50 minutes to 1 hour. Remove from oven and let cool for about 10-15 minutes.

Step 3. While the crust bakes, make the Caesar dressing.

Step 4. Add all dressing ingredients to a bowl and mix well. Add water to give it the desired thinness. I used about 1/8 cup water to make the dressing a little bit runny.

Step 5. Chop romaine lettuce and dress with Caesar dressing.

Step 6. Top the pizza crust with the Caesar salad. Top that with shaved Parmesan, lemon zest and balsamic glaze.
