  • Olive oil – Find yourself a high quality olive oil. It’s so much better than the cheap stuff! I recommend Grove and Vine.
  • Soy sauce – I used low sodium. You can substitute with coconut aminos and make this recipe gluten free!
  • Dijon
  • Onion powder
  • Garlic powder
  • Smoked paprika – I prefer smoked paprika, as it just gives everything so much more flavor.
  • Salt

  • SAUCE FOR TOPPING
  • Mayonnaise

  • Sriracha – You can use your favorite hot sauce but I think the sriracha and soy sauce balance well together.

  • Zucchini chopped to 1 inch cubes

Step 1. Preheat oven to 400 degrees.

Step 2. Add all marinade ingredients to a bowl, and mix well.

Step 3. Chop your veggies and sausage into bite-sized pieces, and toss in the marinade.

Step 4. Pour all onto a baking sheet. Roast everything for about 30 minutes or until veggies are fork tender.

Step 5. While that roasts, make the sauce for topping.

Step 6. Add the mayo, garlic powder and hot sauce to a bowl and stir until well combined.
