Keto Fried Chicken with Hot Honey Sauce

I don’t really follow any specific diets. My motto is everything in moderation, and eat as clean as possible without depriving myself. For this recipe, however, I went the keto route. I wanted to crust my chicken with something other than a breading, so I used pork rinds! This gave my chicken that crispy fried texture that I was looking for, without the gluten and carbs. Now, if you are eating “true keto,” you shouldn’t use the hot honey, as the sugars can kick you out of ketosis. But if you are just looking for a lower carb option, this recipe is for you.

Start by slicing your chicken breasts along the center, making them extra thin. You can also pound them out, but I prefer the method of cutting them. Once they are thin, cut into smaller pieces. Melt your butter. Dip each piece of chicken in the melted butter, then dredge in the crushed pork rinds. Lay on a greased baking sheet, and repeat until all chicken is coated.

Bake your chicken at 375 for about 15 minutes, until it is cooked through. While the chicken cooks, make your hot honey sauce.

Put all hot honey ingredients into a frying pan and cook over medium heat, stirring constantly.

Once your chicken is cooked through, remove the chicken and switch your oven to broil. Drizzle the hot honey on the chicken, and place under the broiler for a few minutes until it’s crispy.

Ingredients
  

Chicken

  • 2 Large chicken breasts sliced in half the long way, so they make two thin breasts
  • 4 Cups pork rinds crushed, I used salt and pepper flavor
  • 4 Tbsp melted butter

Hot Honey Sauce

  • 1/2 Cup honey
  • 1/4 Cup hot sauce of choice I used franks red hot
  • 4 Cloves roasted garlic smashed
  • 1/2 Tsp paprika
  • 1/2 Tsp crushed red pepper flakes
  • 1/4 Tsp cayenne for hotter hot honey

Instructions
 

  • Preheat over to 375 degrees.
    Slice chicken breast the long way (almost to butterfly them) to make them thinner. You can also pound them out if you would like. Then cut them into smaller pieces.
    Melt butter and dip your chicken breaks in it, then dredge that in the crushed pork rinds. Repeat until all chicken is crusted.
    Place chicken on a greased or sprayed baking sheet. Bake for about 15 minutes, until cooked through.
    While the chicken cooks, make the hot honey. To a frying pan, add honey, hot sauce, smashed roasted garlic, and spices. Stir constantly until honey is bubbling. Once it bubbles, remove from heat.
    When the chicken is done, remove from the oven and turn your broiler to high. Drizzle the hot honey on the chicken, and broil for a few minutes, until the chicken is crispy.
