Italian Tortelloni Salad
Pasta salads are so versatile. You can add literally anything you want and create a whole meal. I was craving a hearty, Italian pasta salad, so I decided to cook up some cheese tortelloni. This tortelloni can be found in the cooler section of the grocery store, and boils up in just 3 minutes. Give this delicious, super easy Italian Tortelloni salad a try.

This recipe is so easy. It’s a kind of semi-home-made recipe…with nothing that’s actually home made. You can buy any of these items right in the grocery store, toss them together and this becomes a full meal.
Make your tortelloni as directed. This tortelloni is Rana brand, and it can be found in the cooler section of your local grocery store. It cooks up in just 3 minutes after your water boils.




Add your favorite ingredients. I wanted an Italian pasta salad that was both kid and adult friendly, so I added mini pepperonis (because how fun are those?), sliced black olives, diced green peppers, shallot and Olive Garden signature Italian dressing. Tossed it all together, another you have it. Make it fancy with some freshly grated Parmesan cheese. Enjoy your Italian Tortelloni Salad as a side dish or a full meal!


Italian Tortelloni Salad
Equipment
- 1 Sauce Pan
- 1 Large Bowl
- 1 Knife
Ingredients
- 20 Ounce bag of tortelloni I used Rana brand
- 1-2 green bell peppers diced
- 1 shallot thinly sliced
- 3 Ounces mini pepperonis
- 1/2 Can sliced black olives
- 3/4 Cup Italian dressing of choice I used Olive Garden Signature Italian
- grated Parmesan to garnish
Instructions
- Make tortelloni per directions.Chop bell peppers and shallot into small pieces. To a bowl, add cooled tortelloni, black olives, peppers, shallot, mini pepperonis, dressing and mix until well combined. Top with grated Parmesan to taste.Serve immediately, and store the remainder in the refrigerator.
