In case you haven’t noticed, I’ve been experimenting a little with hot honey. This ingredient has proven to be quite versatile. It’s amazing on chicken for sure, and now salmon, roasted on a bed of rice, paired with broccoli and served with some avocado salsa. If you are looking for a complete meal, and a different way to enjoy salmon, try these hot honey salmon bowls.
Start by placing your salmon chunks and broccoli pieces on a sprayed baking sheet. Toss with olive oil and roast for about 10 minutes. While the salmon and broccoli roast, make your hot honey.
To a pan, add your honey and spices. Cook at medium heat, stirring constantly, until the honey starts to bubble. Let it bubble, while stirring, for a few minutes, so the flavors meld together.
Remove your salmon from the oven and toss with some of the hot honey, leaving extra. After you’ve given it a good toss, return to the oven and broil for about 3 minutes, until the salmon gets a little crispy.
Before serving, make your rice as directed. You can also pair this with avocado feta salsa. Be sure to make a lot of this, as you will eat it with this salmon, on its own, and on everything else in between. It’s soooo good.
To plate, lay a layer of rice down, then your broccoli and salmon. Top with avocado feta salsa. You can then drizzle some extra hot honey on your hot honey salmon bowls, or even cool that spice down with my mom’s homemade buttermilk ranch.
Hot Honey Salmon and Broccoli Bowls
- 1` Sheet Pan
- 1 Knife
- 1 Sauce Pan
- 1 Cup cooked rice
- 16 Oz salmon cubed
- 1 Head broccoli small
- 3 Tbsp olive oil
- 1/2 Cup honey
- 3 Tbsp hot sauce I used franks red hot
- 2 Tsp cayenne
- 1 Tsp chipotle powder
- 1 Tsp garlic powder
- 1/ tsp onion powder
- 2 avocados diced
- 1 jalapeno sliced
- 1/2 Cup crumbled feta
- 1 Tsp lemon juice
- 1/4 Cup pepitas
- Make rice as directed.Preheat oven to 450 degrees. Spray your sheet pan with non-stick spray. Place chopped broccoli and cubed salmon on the pan and toss with olive oil. Bake for 10 minutes until the salmon is just undercooked.While the salmon and broccoli cook, make the hot honey. To a pan, add the honey and warm until it just starts bubbling. Add your spices and stir. Add a tablespoon or two of butter to add richness. This step is optional. Remove salmon and broccoli from the oven and toss in the hot honey. You can add sesame seeds if you have them. Save some hot honey for drizzling later. Return to the oven and broil for about 3 minutes until the salmon gets a little crispy. While that cools, make the avocado salsa. Place all ingredients in a bowl and stir together. Plate.. white rice on the bottom, and top with avocado salsa, broccoli, salmon and more of that hot honey.
