Hidden Veggie Chicken Nuggets

- Bowl
- Sheet Pan
- Ice Cream Scoop – can also use any spoon.
- Cheese grater
- Frying Pan
- Spatula
- Parchment paper
Ingredients & substitutions
- Small zucchini
- Medium carrot
- Yellow onion
- Ground chicken – You can also use ground turkey
- Garlic powder
- Black pepper
- Seasoned salt
- Panko bread crumbs

How to make these healthy chicken nuggets
- Preheat oven to 375 degrees.
- Grate your carrot and zucchini with a cheese grater. I used a box grater.
- To a frying pan, add your zucchini and carrot and cook until soft. This should take 5-10 min over medium heat, stirring occasionally.
- To a bowl, add your cooked veggies, ground chicken, panko and spices and mix until well combined.
- Scoop out the mixture level with your ice cream scoop. Shape like a chicken nuggets and lay on your parchment lined pan. Do this until your mixture is all gone.
- Bake for 10 minutes, then flip each nugget, and bake for another 10 minutes. Enjoy with your favorite dipping sauce!
