Chocolate Peanut Butter Rice Krispie Treats

I love those rice crispy treats with peanut butter and covered in a thick layer of chocolate. But they aren’t the healthiest things I’ve ever eaten, so I wanted to come up with a healthier version. These healthy chocolate peanut butter rice krispie treats are made with rice cakes, peanut butter, maple syrup and chocolate. Just as delectable, with some nutritional value. If you like treats like I do, give this recipe a try.

Making Chocolate Peanut Butter Rice Krispie Treats

Start by breaking apart your rice cakes. Break them into small pieces and place a bowl. Add your peanut butter and maple syrup and stir together until mixed well. Pour the rice cake mixture into a parchment lined loaf pan. Pack it down evenly in the bottom of the pan. Set aside.

The Chocolate

Over very low heat, add your chocolate chips to a sauce pan and stir constantly until the chocolate is melted. If you want softer chocolate on top of your rice crispy treat, add a tablespoon or two of peanut butter to your melted chocolate. I like to use hu kitchen chocolate. It’s dairy free and made without sugar alcohols. It has the best nutritional profile I’ve seen with chocolate bars and chips. But you can use any chocolate that you prefer.

Pour the melted chocolate over the rice cake mixture and spread out to the edges. Refrigerate for 1 hour. Cut and enjoy your healthy treats!

  • 1 Sauce Pan
  • 1 silicon spatula
  • 1 Mixing bowl
  • Parchment paper

Ingredients
  

  • 3 rice cakes broken into pieces
  • 1 Cup chocolate chips
  • 1/2 Cup peanut butter
  • 1/4 Cup maple syrup

Instructions
 

  • Break rice cakes into pieces and put in a mixing bowl. Add peanut butter and maple syrup and stir until well combined. Transfer to a parchment lined loaf pan and smash down flat. Set aside.
    In your sauce pan over very low heat, melt your chocolate. If you want the chocolate to be more soft once it hardens, add a tablespoon or two of peanut butter and melt that into the chocolate.
    Pour melted chocolate over the rice cake mixture and spread to the edges. Refrigerate for about 1 hour, or until the chocolate hardens.
