Hash Brown Chicken Casserole

This hash brown chicken casserole is a take on a recipe that my grandmother used to make. My mother now makes a similar recipe for almost every holiday, and the entire family loves it. I decided to make it a meal, by adding chicken to it. It’s so cheesy and delicious, and you will want to devour the whole pan.

Here’s what you’ll need to make it

  • Large Bowl – A bowl large enough to mix all of your ingredients.
  • Spoon – I used a large mixing spoon.
  • Casserole dish – 9 x 13 casserole dish.
  • Aluminum foil – You will cook this casserole covered in foil, then remove the foil when you add the crispy onions.

Ingredients & substitutions

  • Frozen hash browns – Make sure you thaw out the hash browns before you mix everything up. The casserole will cook more evenly.
  • Shredded cheddar cheese – Some cheese will go in the mixture, and the rest on top. You can buy pre-shredded, but I find that the cheese melts better when you shred it on your own.
  • Cream of mushroom soup – I just use a can of Campbell’s cream of mushroom soup.
  • Milk
  • Crispy fried onions – Some of the crispy onions will go into the mixture, and more will go on the top for that added crunch.
  • Sour cream – If you wanted to make this just a little healthier, you can sub with plain Greek yogurt, though I haven’t tested the recipe this way.
  • Chicken breasts – You can do this a couple of ways. I like to put my chicken in the slow cooker before I leave for work in the morning. By the time I get home, they are ready to be shredded. Otherwise, you can also use a rotisserie chicken.
  • Green pepper – Finely dice your pepper. Just this little bit of green pepper gives this whole casserole an added punch of flavor. Don’t skip it!

How to make this hash brown casserole with chicken

Step 1. Combine all ingredients, setting aside half of the cheese and the fried onions.

Step 2. Stir ingredients together, and put in a sprayed baking pan. Cover and bake at 350 degrees for about an hour.

Step 3. Remove from oven, sprinkle remaining cheese and crispy onions on the top and return to the oven for about another 5-10 minutes.

Can you eat chicken casserole the next day?

Many casseroles seem to improve in flavour if kept overnight (cool them quickly and keep them in a refrigerator, by the way, once they’re cold). This means it’s quite possible to make two casseroles while the oven is in full swing, and keep one for the next day.

How long can chicken casserole sit out?

How long is it good for after being cooked? Cooked potato dishes must be kept in the refrigerator within two hours of being exposed. In the fridge, hash brown casserole can stay good for about 3 to 5 days as long as it has been cooked and properly stored.

Does hash brown casserole reheat well?

Leftovers should be refrigerated in an airtight container and are best if used within 3 days. You can also freeze leftovers, they’re best if used within 3 months. To reheat, let it defrost in the refrigerator and bake it in a 350° oven, covered, for 20-25 minutes.
