Goat Cheese Balls
If you are looking for something a little more interesting to include on your salad, give these goat cheese balls a try. This is a cool hack that gives you the feeling that you are eating a fried goat cheese ball without the mess. The addition of the honey makes this everything you could want when eating goat cheese; The earthiness, the creaminess, the sweetness and the crunch. Add some fresh basil and this recipe becomes something right off of a restaurant menu. Give this super easy recipe a try.

Start by toasting your panko. To a bowl, add your panko and spices and mix them together. To a pan over low/ medium heat, add about 2 tbsp of butter and let it melt. Once melted, add your panko mixture and stir constantly until the bread crumbs are toasted. Remove from heat and add back into the original bowl.

Cut your goat cheese log into 16 even slices. Roll each slice into a ball and set aside. Warm your honey in the microwave for about 10 seconds, so the honey becomes more liquid. Roll each ball in the honey, then into the toasted panko. Repeat until all balls are coated.

Serve your goat cheese balls immediately, as they lose their crunch when stored in the refrigerator. They are fantastic on salads or a great addition to a charcuterie board. I’ve only eaten these on a salad, but I envision a little area for these on my next charcuterie display! These are fantastic with a little fresh basil as well.
