Here is a fun idea for your Easter dessert; Easter Blender Brownies! This is a great recipe for anytime of year, but because it’s Easter, we are going to top these bad boys with mini eggs! Mini eggs are one of my favorite Easter candies. This year, we took it up a notch and bought the dark chocolate mini eggs! I didn’t even know those existed!

This recipe is so easy, and it’s definitely one you are going to want to book mark for the future. It’s another great way to use up those super ripe bananas. The batter is made easily in a blender for minimal dish clean up. There are a lot of good ingredients in these as well! No processed sugar, other than what’s in your mini eggs (if you choose the right chocolate chips) and gluten free. Bananas, peanut butter and maple syrup make this sweet treat slightly less guilt ridden.

Simply toss all ingredients, except for the chocolate chips and mini eggs, into a blender and blend until smooth. After the batter is blended, add the chocolate chips and mix with your spatula. Pour the batter into your greased pan and smooth out. Roughly crush your mini eggs in a bag and pour those on top of the brownies. Bake at 350 for about 20 minutes.

Once the brownies are baked, let them cool completely before serving. Serve your Easter blender brownies with your favorite topping. My favorite is whipped cream, but ice cream would be a great option as well!

  • 1 9 x 9 pan
  • 1 Spatula

Ingredients
  

  • 3 Small ripe bananas
  • 1 Cup peanut butter
  • 2/3 Cup cocoa powder
  • 2 eggs
  • 6 Tbsp maple syrup
  • 2 Tbsp vanilla extract
  • 1/2 Tsp baking soda
  • 1/4 Tsp salt
  • 1 Tbsp cinnamon
  • 1/2 Cup chocolate chips
  • 1 Bag Cadbury mini eggs
  • cooking spray

Instructions
 

  • Pre heat oven to 350 degrees.
    Add all ingredients except for the chocolate chips and mini eggs to a blender, and blend until smooth. Add chocolate chips and stir with a spatula. To your sprayed pan, add the batter and smooth out.
    Put mini eggs in a plastic bag and break with a rolling pin or meat tenderizer, so they break into rough pieces. Spread egg pieces on top of the brownie and bake for 20 minutes. Let cool completely before serving. Serve with whipped cream or ice cream.
