Crispy Potato Salad

This… darn… potato salad. WOW. The crispy smashed tater tots paired with the fresh herby dressing is just a winner… plain and simple. If you love a good balance of the good stuff and the fried stuff, this is your recipe. The crispy potato salad is a fun take on the original thing, and you just have to make this. Trust me!

Here’s what you’ll need to make it

  • Sheet pan – A large flat pan, large enough to give all the tater tots a little room when they are smashed. I used a half sheet and it was just big enough.
  • Bowl – This is to mix your dressing. Large enough for the dressing, and the tots once they are cooked.
  • Knife
  • Cutting board
  • Spatula or spoon
  • Parchment paper – Very important! Parchment keeps the tots from sticking to the pan.
  • Glass with a flat bottom – Spray the bottom of the glass with cooking spray, so the tots come off. They will likely still stick, but easily come off the bottom of the glass when it’s sprayed.

Ingredients & substitutions

  • Tater tots
  • Lemon Juice – Juice of a whole lemon. Make sure you remove the seeds!
  • Mayonnaise – I prefer Hellman’s Olive Oil mayonnaise. But you can use whatever you prefer. Use a vegan mayo and this recipe becomes completely vegan!
  • Greek yogurt – I used Fage plain Greek because it’s nice and thick.
  • Whole grain mustard
  • Garlic – minced
  • Chopped dill – I use fresh. This recipe is so good with fresh ingredients. It really balances the fried tater tots.
  • Chopped parsley – Fresh.
  • Chopped chives – Fresh
  • Cucumber chopped -I used a mini cucumber. It really lightens the sauce.
  • Shallot chopped – You can also use a red onion if you prefer. If you use a red onion, use about 1/4 of it.
  • Salt and pepper to taste

How to make this herbed potato salad

Step 1. Preheat oven to 400 degrees. Add your tater tots to a parchment lined baking sheet. Bake for 10 minutes, then remove from oven and smash flat. I used the bottom of a glass to smash the tots. Salt and pepper them, and return to the oven for 30 minutes or until they are crispy.

Step 2. In the meantime, make your sauce. To a bowl, add all chopped ingredients, mayonnaise and Greek yogurt and mix well.

Step 3. Once the tater tots are done, let them cool for about 10 minutes.

Step 4. Once cooled, add them to the bowl with the sauce, mix well and serve immediately. (They will get soggy if you wait to enjoy).
