Crescent Roll Breakfast Ring

If you are looking for an easy, warm breakfast idea, look no further. This crescent roll breakfast ring is made with silky scrambled eggs, gooey American cheese and salty ham. It’s the perfect breakfast that the whole family will love.

One thing I love about this recipe is that it’s so versatile. You can stuff this ring with anything you would like. I chose ham, cheese, eggs and my chipotle mayo, but you can really use anything. Other ideas would be sausage and eggs, bacon and eggs, you could even add veggies for a more grown up version. I was making this for my son, so I just went with the standard eggs, ham and cheese. He does like a little kick as well, so the chipotle mayo was a safe bet.

Lay the crescent roll out like a star, and start filling the ring with your ham and cheese. Once that’s all laid out, scramble your eggs. You can find my perfectly scrambled egg recipe here. Be sure to undercook your scrambled eggs slightly, as they will cook more in the oven. Once your eggs are cooked, add the chipotle mayo, and top the ring with your eggs.

Now start folding your crescent rolls over the filling. Brush the top with the little bit of egg that’s left in the bowl. This will make the top nice and golden brown.

Bake the entire thing for about 15 minutes, which is slightly longer than directed on the crescent roll package. This is necessary though, as the bottom will not be cooked if you bake it for less time. Once it is done, remove from the oven and let cool slightly. Garnish with cilantro, it perfectly pairs with the chipotle mayo.

  • 1 Sheet Pan
  • 1 Frying Pan
  • 1 Rubber Spatula


  • 1 Tube crescent rolls
  • 8 Oz deli ham
  • 8 eggs scrambled: see recipe: perfectly scrambled eggs
  • 7 Slices American cheese
  • chipotle sauce see recipe: Chipotle Mayo


  • Preheat oven to 325 degrees as directed on the crescent roll package.
    Line your sheet pan with parchment paper, or spray with cooking spray.
    Lay out your crescent rolls to form a star, with the wide end toward the center.
    Lay ham around the center of the crescent rolls, as pictured.
    Lay cheese slices on top of the ham. Drizzle the chipotle mayo on top of the cheese.
    Scramble the eggs in a frying pan. Follow directions for the perfectly scrambled eggs. Slightly undercook them as they will cook a little more in the oven while the crescent rolls bake. Lay the scrambled eggs on top of the cheese.
    Being rolling the crescent roll ends toward the middle over the filling. Continue to do that until it forms a ring.
    With the leftover raw eggs in your bowl, brush the top of the crescent roll with the egg, so it bakes nice and golden brown.
    Garnish with cilantro.
