I love having some better-for-you sweet treats on hand in case that sweet tooth strikes. Who doesn’t love cookie dough, but you definitely don’t want to just eat a whole bunch of the real thing. This cookie dough bark is just like the real thing, made with better ingredients. This is the perfect snack to have on hand when you need just a touch of something sweet.

Here’s what you’ll need to make it

  • Large Bowl – For mixing your dough.
  • Small Bowl – For melting your chocolate topping, so make sure it’s microwave safe!
  • Sheet Pan – I use a large sheet pan, so it gives me room to work. But any flat surface that you can transfer to the refrigerator or freezer will do.
  • Parchment paper – I use parchment so the bark doesn’t stick to the pan.
  • Spatula – Something stiff enough for stirring.
  • Measuring Cups and Spoons – Unless you measure with your heart, like I do.

Ingredients & substitutions

DOUGH

  • 1.5 cups almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 cup chocolate chips 

CHOCOLATE TOPPING

  • 1 tsp coconut oil
  • 1/4 cup almond butter
  • 2 Tbsp Sprinkles
  • 1/2 cup chocolate chips

How to make this almond flour cookie dough recipe

Step 1. To a bowl, add almond flour, melted coconut oil, maple syrup, vanilla. Stir until mixed well. Add the chocolate chips and fold them into the dough.

Step 2. Place parchment paper on a cookie sheet. Smash cookie dough mixture onto the parchment paper until about 1/4-1/2 inch thick. Put in freezer for about 20 minutes.

Step 3. While the dough sets, add coconut oil, almond butter, and chocolate chips to a microwave safe bowl. Heat in 10-20 second intervals, stirring in between, until the mixture is melted and well combined.

Step 4. Pour melted chocolate over the cookie dough and spread evenly, leaving about 1/4 inch of dough showing on the sides. Before the chocolate hardens, add sprinkles to the top. Cut into pieces when it’s set.

Step 5. Store in either your refrigerator or freezer, and enjoy as desired.

You can top it with anything you want! You can use mini m&m’s, nuts or nothing at all. Whatever you prefer!

Can I make this without chocolate?

You sure can! You can forgo the chocolate chips and the chocolate topping. If you do that, it will just be more like sugar cookie dough bark.
