Chocolate Peanut Butter Stuffed Dates

I can’t believe I haven’t shared this recipe with all of you yet. This recipe is one of our favorite sweet treats to have on hand. You can make these chocolate peanut butter stuffed dates in batches, so you are sure to always have a better-for-you sweet snack available when that sweet tooth strikes. I hope you love these little chocolate covered treats as much as we do.

Ingredients & substitutions

  • Medjool dates – Buy them whole and pit them yourself. They are more tender this way. Pitting the dates does not take long.
  • Protein powder – I use Just Ingredients chocolate protein powder. It’s a good, high-quality powder and it tastes great!
  • Peanut butter – You can use natural or regular peanut butter. Whichever you prefer.
  • Maple syrup – Again, do yourself a favor and buy the real stuff. It’s so much better for you and has only natural sugars.
  • Hu-kitchen chocolate bars – I used 3 bars, so it comes to about 6 ounces of chocolate. I use hu-kitchen because of their quality ingredients. And they melt so nicely!

How to make this date snack treat

Step 1. Pit your dates by butterflying them.

Step 2. To a bowl, add peanut butter, protein powder and maple syrup. Still until well combined and has a thick frosting-like consistency. 

Step 3. With a butter knife, stuff the dates with the peanut butter mixture and set aside. 

Step 4. In a sauce pan over very low heat, add your chocolate bars and stir constantly until they are melted.

Step 5. Once melted, drizzle the chocolate over the dates and let harden for about 4 hours or more. Enjoy!
