I love growing fresh veggies in our garden. This year, we decided to try growing cabbage. Although it only yielded one head of cabbage, I’m proud to say I was able to make this chipotle slaw with crispy chicken with the fresh grown head of cabbage from my garden! Regardless of whether or not you grew your own cabbage, this chipotle slaw recipe is worth a try.   • Chipotle Slaw
  • 1/2 Head cabbage small
  • 2 carrots
  • 1 Cup mayonnaise
  • 1 Can chipotle sauce
  • Air Fryer Crispy Chicken
  • 4 boneless skinless chicken thighs can also use chicken breasts if you prefer
  • 1 Cup panko
  • 1 Cup all purpose flour
  • 1 Tbsp chili powder
  • 1 Tbsp garlic powder
  • 1/2 Tsp salt

How to make this easy dinner recipe

  • Preheat air fryer to 350 degrees.
  • To 3 bowls, add your flour and seasoning to one, your panko to another, and your whisked eggs to the last bowl. Dip each chicken thigh in the flour mixture first, then the egg, then the panko making sure each is coated on all sides. Do this with all thighs. Place two at a time in your air fryer, and spray with cooking spray. Cook for 12 minutes, then remove and flip over, spray again with cooking spray and let cook for 4 more minutes. While the chicken cooks, chop your cabbage into fine pieces for the slaw.
  • Grate the carrots with the cheese grater. Place in a large bowl together. In another small bowl, add the mayo and chipotle sauce and whisk together. Pour over your coleslaw and mix well. Serve the slaw with the crispy chicken on top. Garnish your chipotle slaw with crispy chicken with parsley (optional).
