Ingredients & substitutions

  • Grape or Cherry tomatoes – I prefer grape tomatoes. And it’s really just a preference.
  • Mozzarella pearls – I use BelGiosiso, which is made locally but sold nationally.
  • Basil – You have to use fresh basil for this. I like to grow my own in a pot, but you can also buy it as well.
  • Balsamic Reduction – I use Alessi Balsamic Reduction. You can also make your own, but It makes the house smell like vinegar, so I prefer to buy.

How to make this Caprese salad with mozzarella pearls

Step 1. Place one mozzarella pearl in each skull mold. Microwave for about 30 seconds, or until the mozzarella is soft. There will be some water that comes out of the mozzarella, so when pushing the cheese into the mold, use a paper towel to soak up some of the water. Set aside and let come back to room temperature.

Step 2. While the cheese cools, slice the grape tomatoes in half the long way, and place in a bowl.

Step 3. Chop fresh basil leaves and toss with the tomatoes.

Step 5. Drizzle with balsamic glaze.

Step 6. Serve with crostini or crackers.
