Butter Roasted Sweet Potatoes

Start by cutting the potatoes in half the long way. Cross cut the open end so the butter will melt into the potato. Do this with each potato.
Make the garlic honey butter. Take your roasted garlic and squeeze out the garlic into the butter and honey. Smash the garlic and mix thoroughly. Spread the butter mixture on the potatoes. Top with parsley if you have it, but this step is optional. Put in a pan and roast for about 40 minutes, or until the potatoes are tender.








Top each potato with any leftover garlic honey butter, feta, pistachios and parsley before serving your butter roasted sweet potatoes.

Butter Roasted Sweet Potatoes with Feta and Pistachio

- 1 Cutting board
- 1 Sheet Pan
Ingredients
- 2 sweet potatoes cut in half
- 4 Tbsp salted butter melted
- 1 Head roasted garlic see my roasted garlic recipe
- crumbled feta to taste
- pistachio to taste
- parsley
- 2 tbsp Honey
Instructions
- Preheat oven to 450 degrees.Cut the potatoes in half the long way, and cross cut the top. Melt your butter and squeeze the roasted garlic into the butter, and mix well.Spread the butter mixture on the cut side of the sweet potatoes. Roast at 450 degrees for about 40 minutes, or until the potatoes are tender.Top with more butter, feta, crushed pistachios and parsley.
