If you are looking for a flavorful side dish, give these butter roasted sweet potatoes with feta and pistachios a try. The sweetness of the potatoes pairs so nicely with the salty feta and pistachios. It’s a unique dish that’s appealing to the eyes, and is easy to put together to serve a crowd. This is a great option for anyone looking for a little something different to bring to your next holiday gathering.
Start by cutting the potatoes in half the long way. Cross cut the open end so the butter will melt into the potato. Do this with each potato.
Make the garlic honey butter. Take your roasted garlic and squeeze out the garlic into the butter and honey. Smash the garlic and mix thoroughly. Spread the butter mixture on the potatoes. Top with parsley if you have it, but this step is optional. Put in a pan and roast for about 40 minutes, or until the potatoes are tender.
Top each potato with any leftover garlic honey butter, feta, pistachios and parsley before serving your butter roasted sweet potatoes.
The crunch of the pistachios and saltiness of the feta pair so nicely with the sweet potatoes. This will become a staple at your holiday family gatherings!
