Spring is on the horizon here in Wisconsin, and it’s making me crave a bright salad. This Brussels sprouts salad is sweet and salty, and the perfect side or lunch. I like to make this ahead of time and take it for lunch on the go. I add either salmon or chicken. It’s so filling and the Brussels sprouts stay crunchy, even when dressed. Give this Brussels sprouts salad recipe a try!

Start by chopping your Brussels sprouts. You can buy them whole and cut them yourself, or you can buy them pre-shaved in a bag. The pre-shaved is nice, but it doesn’t take long to cut them yourself. Once you are done cutting the Brussels sprouts, cut open the pomegranate and remove the seeds. The best way to remove the pomegranate seeds is to cut along the top, removing the cap. Then cut down the sides and pull the rind apart. The seeds will come out easily. Find easy ways to open a pomegranate here.

Place the Brussels sprouts, pomegranate seeds, feta and pistachios in a bowl. Now it’s time to make the dressing. To your mason jar, add all dressing ingredients. Close the jar and shake until all ingredients are combined. Pour dressing over the salad and toss.

Ingredients
  

  • 1 Bag Brussels sprouts
  • 1 Pomegranate
  • 1/2 Cup Crumbled Feta
  • 1/2 Cup Pistachios

Prosecco Viniagrette

  • 5 Tbsp Honey
  • 2 Tbsp Dijon mustard
  • 2 Tbsp Prosecco Viniagrette
  • 1/4 Cup Mayonnaise

Instructions
 

  • Slice Brussels sprouts. Use a knife or a mandolin. You can also buy them pre-shaved.
    Cut open pomegranate and remove seeds.
    Place shaved Brussels sprouts, pomegranate seeds, pistachios and feta in a bowl.
    Make the dressing.. Add all ingredients into a mason jar and shake until combined. Pour dressing on salad and toss.
    Eat as is for a side, or make it a meal by adding your protein of choice.
