  • Frying Pan – I used my Always pan. It’s deep enough to boil pasta, and you can also fry up your shallot and garlic.
  • Knife – To chop your garlic and shallot.

Ingredients & substitutions

  • Pasta – I used penne pasta, but you can use your favorite.
  • Garlic – I use fresh garlic, but you can also use minced garlic in a jar. Worst case, you can use garlic powder, but the main ingredient in this dish is the garlic, so fresh is best.
  • Shallot – I like to use shallots because they have a nice, mild, onion flavor.
  • Beets – I used canned beets, so they are very soft. If you use fresh, you will need to cook and peel them.
  • Cottage cheese
  • Grated Parmesan 
  • Olive oil – For cooking the garlic and shallots.
  • salt and pepper
  • parsley for serving

How to make this pink sauce for pasta

Step 1. Boil pasta as directed. Set aside about 1/2 cup of pasta water.

Step 2. To a pan, add your minced garlic with olive oil over medium heat. Cook until fragrant and remove from heat.

Step 3. To a blender, add your cooked beets, cottage cheese, Parmesan cheese, salt, pepper and pasta water and blend until smooth.

Step 4. Pour sauce over pasta and stir until combined.

Step 5. Top with more Parmesan, parsley for garnish if you have it, and serve.
