Baked Brie with Jam

I love a good, easy recipe for the approaching holidays. This baked Brie with jam is versatile, festive, and packed full of flavor. You can add any toppings that you would like, but I think the rosemary, nuts and jam are the perfect combination for those cool holiday nights.   • Silicon spatula – For stirring the honey, nuts and rosemary.
  • Knife – For scoring the wheel of Brie before baking.

Ingredients & substitutions

  • Large Brie Wheel – I use triple cream Brie. I believe it has better flavor.
  • Jam – I used a cranberry raspberry jam, but you can use whatever jam you would like! I would even use cranberry sauce, if you wanted to use something that is slightly less sweet.
  • Walnuts – You can also use pecans if that’s what you prefer. Really any mild nut will do.
  • Honey – Use this when toasting the nuts. You can also drizzle more honey over the whole wheel for serving, if you like it a little extra sweet.

How to make this festive Brie

Step 1. Score Brie in a checkered pattern, but only cut about half way through.

Step 2. Place Brie in an oven safe dish for baking. Bake for about 15 minutes, until the Brie is melted.

Step 3. To a small sauce pan, heat to medium and add chopped walnuts and toast for 2-3 minutes, stirring constantly, being careful not to burn.

Step 4. Add chopped rosemary, honey and stir. Cook for a minute or two more, until it gets sticky. Remove from heat.

Step 5. Spread the jam on top of the scored Brie. Top with the walnut mixture and add a drizzle of honey. Garnish with fresh rosemary.

Step 6. Serve with crostini or crackers.

When do you know when baked Brie is done?

Preheat oven to 180°C/350°F (all oven types). Oven: Bake for 15 to 20 minutes (for 250g/80z), or until melted through. For 500g/1lb brie, increase to 25 minutes. To check, gently touch the centre of the brie – it should feel very soft, like it is about to collapse if you press any harder.

How long does baked Brie last?

Baked brie is best fresh, the first time around, but if you have leftovers, you can store the cooled baked brie in an airtight container in the refrigerator for up to 3 days. You can reheat in the microwave or in the oven until the cheese is melty.

Does the cheese skin stay on when serving Brie?

In this baked brie recipe, I do not remove the rind because I need the surface to spread my jam and to add my beautiful nuts and toppings. The rind keeps the wheel of cheese together, and once you take it out of the oven and slice into it, all the gooey deliciousness oozes out like a nice surprise!
