Avocado Toast with Chili Crisp

It’s no secret that one of my favorite meals is avocado toast. So hearty and versatile, you can add any fixings you like. While there are so many versions out there, I believe simple is best. A little seasoning in that avocado mash with a poached egg is generally perfect… Until I learned about chili crisp! It’s quickly becoming a favorite condiment, and it definitely hits drizzled on top of avocado toast. Give this recipe a try if you like spice!

First, choose your bread. I prefer a California sourdough. It’s a softer sourdough, which my husband and kids will both eat. Sourdough has a pretty good nutrition profile as far as white breads go. Generally fewer calories and has prebiotic and probiotic properties. People with a mild gluten issue generally do better on sourdough. So if you haven’t tried sourdough, I highly recommend it!

You will want to get your water boiling for your poached eggs. Check out my recipe for perfectly poached eggs. While your water boils, toast your bread. I use a griddle because oddly enough, we don’t own a toaster. But a toaster is certainly the easiest and quickest method.

Cut open your avocado, remove the pit and scoop the flesh into a bowl. Add your garlic, salt and pepper and mash. Spread the mixture onto the toast evenly. I prefer lots of avocado on each toast. My rule of thumb is that the thickness of the avocado mash should match the thickness of the toast! I use one small avocado for two pieces of toast.

Top your avocado toast with your perfectly poached eggs and drizzle with chili crisp. We prefer the spicy chili crisp, but there is also a more mild version if spice isn’t your thing.

Devour your avocado toast with chili crisp! Avocado toast is generally looked at as a breakfast or brunch item, but we eat avocado toast as an easy meal anytime of the day.
